So much appears to be about (a lack of) general knowledge as well. Beekeepers I know are forever amazed at seemingly well-educated adults not knowing about, for instance, honey's near infinite shelf-life or even that different plants beget different flavours.
Not sure how you fix that but I can say from experience at markets that knowledge around food generally, its provenance and preparation is frighteningly woeful.
Totally with you on that but I think that’s why we’re doing what we’re doing, isn’t it? Farmers’ markets. Articles about farmers’ markets. Articles about honey. Articles about honey at farmers’ markets. All that must be with at least a vague hope of making a difference.
A great message to share - the proportion of ingredients really should be on every consumable. A 35% juice cider, a 10% honey would offer enough information for people to make an informed choice (...and usually made industrially)

Yes! a 10% honey should be labelled as ‘syrup with a bit of honey’, surely.
