Also, my tip would be... you can use almost any combo of root veg for this dish https://www.abelandcole.co.uk/recipes/roots-manoeuvre-curry

And if I'm feeling lazy, I'll simply roast up whatever veg I have (beets, parsnips, carrots) and eat them warm with some quinoa (simply cooked in veg stock, provides protein) and a yoghurt dressing - organic plain yoghurt, garlic, lemon, s&p) and some fresh parsley.
